Cookie time!

Like many I spent this past festive celebration with Family and loved ones.

As one of the last to confirm attendance I was tasked with coming up with ‘my contribution’?

……What am I bringing to the table. Literally!

Well as all the big meats, sides & nibbles are taken *thankfully*

I guess I’m making Cookies! Woo! 2 types in fact:

White choc chip and coconut & Peanut butter choc chip Cookies!

So after much practice and recipe choosing. Here they are. Ingredients used below (please note I tend to not actually measure anything and just go on guess work and ‘Alicia’ estimates!! luckily they still taste good). However one tip I do have is to make the cookie dough a day before then place in the fridge for at least 24 hours if you plan to make identical looking cookies. This way you can roll the dough into a cylindrical shape, then slice into symmetrical treats.

I also don’t follow any logical step by step method….just mix it all together……..Et Voila!!!

Peanut butter choc chip cookies

  • 130g peanut butter
  • 110g butter, softened
  • 220g dark brown soft sugar
  • 100g caster sugar
  • 2 eggs
  • 2 tablespoons golden syrup
  • 2 tablespoons water
  • 2 teaspoons vanilla extract
  • 310g plain flour
  • 1 teaspoon bicarbonate of soda
  • 1/2 teaspoon salt
  • 340g chopped plain chocolate

Makes 30 medium sized cookies

  • 175g dark brown soft sugar
  • 275g butter, softened
  • 100g caster sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 200g plain flour
  • 1 teaspoon bicarbonate of soda
  • 200g porridge oats
  • 50g desiccated coconut
  • 175g white chocolate chips

Makes 25 small cookies

Let me know if you try these out… for me they went down a treat on Christmas day, Boxing day …. and yesterday as I made so many!!
